Chicken and Sausage Cacciatore a hearty meal for a dreary day
I was looking for a recipe to use up the package of fresh mushrooms in my fridge when I stumbled across this one for slow-cooked Chicken and Sausage Cacciatore.
I wanted to make it because it called for so many vegetables. Plus, to save time, I was able to make extra pasta and tomato sauce Sunday when I made Cheesy Pizza Casserole.
Rob wanted me to make it because it called for two different kinds of meat.
The result was delicious – the chicken cooked up moister than any other I've made in the slow cooker. It must be the result of stewing all day beneath layers of Italian sausage and tomato sauce. Plus, the vegetables were tender and gave the dish plenty of flavor. It was the perfect dish to accompany the dreary, wet weather we've been having.
One of my Facebook friends also tried making it and suggested doubling up the vegetables. That's a good idea, especially because the vegetables cooked down a lot.
I'm adding this recipe to my list of favorites. I'm also tickled because, for the second time this week (the first was after the casserole), Rob gave the elite “you can make this again” rating.
