Last night, we had our friend and neighbor Luke Shepherd over for dinner.
I made a turkey with all the fixings (I brined the turkey and oh my goodness. You have to brine the next turkey you make. I've never had turkey that good). Luke brought over some peanut butter balls he made. (This is the same Luke of tortellini salad fame.)
His peanut butter balls were so good and seem less complicated to make than some recipes for buckeyes.
He based them off this recipe, but with a minor change. Here's his version.
Luke's Peanut Butter Balls
1/4 cup butter
1 1/2 cups peanut butter
4 cups confectioners' sugar
2 teaspoons vanilla extract
2 cups semisweet chocolate chips
Combine the butter, peanut butter, confectioners' sugar and vanilla. Cream well and knead well.
Melt the chocolate chips over low heat. Roll the dough into 1 inch balls. Dip into melted chocolate chips.
Refrigerate overnight (or at least for about 15 minutes) on a cookie sheet lined with wax paper.
