Karen Wisegarver's recipe for homemade Italian Sausage

I got several interesting emails after blogging last week about making homemade breakfast sausage.

One is a work in progress (I'll blog about it next week), and one, I can share today. The latter is Karen Wisegarver's recipe for homemade Italian Sausage. You know  Rob and I have to try this one. She mentions pizza, but I bet it would be awesome in spaghetti, too.

"I used to make this all the time for homemade pizza and we really liked it," Karen wrote. "The original recipe calls for 1 pound of lean ground pork – but I substituted 1 pound of ground turkey – which makes it even better for you."

Blog PhotoHomemade Italian Sausage

Mix the following together in a small container and then add to the ground meat of your choice:

1/2 teaspoon salt

3 1/2 teaspoons paprika

1/4 teaspoon granulated garlic (or powder)

1/3 teaspoon fennel seed

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper (optional).

Mix it well, cover and refrigerate until ready to use. Karen said she used to always throw it together in the morning for use that evening.
