I know some people will think this is nuts, but one of my ways to mentally escape hot weather is to think about how I'm going to decorate for fall this year. (My other favorite strategy is watching Christmas movies in the middle of summer.)
A while back, Rob and I tried making Canadian bacon from scratch. It was great, but I knew I wanted to try a few things differently on the second effort.
I have been on vacation this week, but I'm guessing I am not alone in searching for dishes cool enough to eat for dinner in this heat. I came across this recipe and it looks perfect, especially if you can plan ahead to boil the eggs early in the morning before it gets too hot.
