Lisa Storm Fink was kind enough to send me this recipe and links to several others on her blog when I mentioned a while back that I'd like to feature more side-dish recipes for my Heaping Harvest of Recipes series.

It's a recipe for Cheesy Crockpot Potatoes, which makes tons of sense on Thanksgiving, because it's one less dish to compete for oven space. Lisa also recommends these potato recipes from her blog: Creamy Scalloped Potatoes, Party Potatoes, Paula Deen's Potato Casserole and Ranch Potato Casserole.
Cheesy Crockpot Potatoes
16 ounces sour cream
2 tablespoons butter, melted
1/4 cup chopped onion
1/4 cup water
2 cans cheddar cheese soup
6 medium size potatoes, peeled, cut in chunks - in a hurry, you can use canned potatoes
Combine sour cream, butter, onions, water and soup in crockpot. Mix in the potatoes. Cook on low setting six hours or until potatoes are done.
