Recipe for homemade peanut butter and honey granola

I was talking with my coworker, Cassandra Schowengerdt, who works in The News-Gazette's marketing department, and she mentioned this recipe for peanut-butter and honey granola.

It sounded so good, I thought it would be worth sharing. (It's the second homemade granola recipe I've featured.)


The original recipe comes from a blog called Peanut Butter Fingers.

"I've been known to not use any honey to cut down on the sugar," Cassandra said. That makes it more of a dry cereal, and it has less sugar that way.

Peanut Butter Granola

2 tablespoons creamy peanut butter
2 tablespoons honey
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
1 cup rolled oats

Preheat oven to 325 degrees. Spray a cookie sheet with non-stick cooking spray and set aside. Combine peanut butter and honey in a bowl and microwave until peanut butter melts, about 20 seconds, and stir. Add cinnamon and vanilla to that mixture. Add oats and stir until oats are completely covered. Spread onto prepared cookie sheet and bake for 12 to 15 minutes, until granola is slightly browned. Let cool.
