Recipe for Pork and Beans Bread
I first read about this crazy recipe for Pork and Beans Bread in a mystery called "Plum Pudding Murder" more than a month ago.
It was kind of a hokey story, but I liked it because it includes delicious-sounding recipes, including one for this sweet dessert bread.
To make the bread, you have to puree the pork and beans in a food processor. I got a one for Christmas (actually, a kitchen appliance that includes both a food processor and a blender, which is awesome for my tiny kitchen) and this was one of the first things I made. Mostly, I was curious and wanted to try it.
I took a loaf to my sister and her husband, and had them guess the secret ingredient. They couldn't, although I think my sister was kind of grossed out when I finally told them. (Also, you obviously should not serve this to a vegetarian or vegan.)
It's truly a delicious bread, though. I had it for breakfast one day and it kept me pretty full.
I made some modifications to the recipe I found on allrecipes.com (I'd returned the actual book) to make it healthier. The original calls for 1 cup of oil, which happens to contain almost 1,600 calories. Now that's gross.
I incorporated ground flax as a substitute for some of the oil, and substituted half whole-wheat flour. I also replaced the walnuts in the original for pecans. I think pecans are always better. I also used less sugar than is listed below.
I made one large loaf and two small ones with this recipe, and they baked for exactly the time specified.
Pork and Beans Bread
1 15-ounce can pork and beans
1.5 cups all-purpose flour
1.5 cups whole-wheat flour
2 cups white sugar
1/3 cup canola oil
2 cups ground flax
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup chopped pecans
Preheat oven to 325 degrees. Grease and flour two 9-inch-by-5-inch-by-3-inch loaf pans.
Puree undrained pork and beans in a blender or food processor.
In a large bowl, combine eggs, flour, sugar, salt, oil, cinnamon, vanilla, baking soda and baking powder. Mix well. Gently fold in nuts and pureed pork and beans. Divide batter into pans evenly.
Bake for 60 minutes, or until bread tests done.
