Recipe for Snowed-In Snack Mix

I created this recipe when Rob and I got snowed in a couple winters ago, shortly after we got married.

I submitted this recipe to Gooseberry Patch, my favorite cookbook company, and they published it in a cookbook called "The Christmas Table."

Blog PhotoToday, in all its Marchy, snowy glory, seemed like the perfect time to share this recipe.

Snowed-In Snack Mix

Six cups plain popcorn
1 12-ounce bag white chocolate baking chips
1 cup chocolate-covered raisins
3 ounces whole almonds
1/4 teaspoon salt

Melt baking chips in a glass bowl in the microwave for about two minutes or as long as necessary. Add almonds to a small skillet and toast over medium heat until golden and aromatic. (Careful not to let them burn.)

To a large bowl, add popcorn, then almonds. Add salt and mix well. Add chocolate-covered raisins, and then drizzle melted white chocolate over the whole combination and mix well to distribute ingredients evenly. Pour mixture onto a cookie sheet covered in wax paper and let cool. Break into smaller chunks and enjoy. Store in a well-sealed container.
