Meg Makes: Recipe for Chorizo-stuffed Jalapenos
If you like spicy food, you will love this recipe for Chorizo-stuffed Jalapenos, which is made on the grill. Rob heard the general ingredients mentioned on the radio recently and set out to recreate it.
This is a fairly obvious warning, but these are really hot. I had half of one and then went running. That was a mistake.
12 medium size jalapenos, cored
1 pound chorizo, removed from casing
1/3 cup fresh cilantro, chopped
1/3 cup shredded cheese - Rob used a mix of Colby and Monterey Jack
juice of 1/2 lime
Preheat your grill - Rob's been using the charcoal grill recently, so I can't tell you what temperature he heated it to.
Mix together sausage, cilantro, cheese and lime juice. Stuff mixture inside jalapenos, and put on grill.
Grill about 20 minutes or until sausage is fully cooked and peppers are a bit charred.
