Recipe for Blueberry Peach Crisp

Last summer, I made a delicious peachy, blueberry-y cobbler-ish dessert last year, and I swear I blogged about it. I have peaches and blueberries and wanted to make it again this weekend, but I can't find a record of that recipe anywhere.

In an effort to fix that problem, I'm sharing this recipe for Peach Blueberry Crisp from cooks.com. I know must be similar to the recipe I tried last year. (I was thinking it was a slump or a grunt, rather than a crisp or a cobbler, though.)

The original recipe called for putting the fruit on top, but I switched things around. Also, you can use half the sugar in the fruit and this will still taste delicious.

Blueberry Peach Crisp
Blueberry Peach Crisp
1 cup flour, divided into 3/4 and 1/4 cups
1/2 cup brown sugar
1/3 cup rolled oats
1/3 cup butter, melted
2 cups fresh blueberries
1 teaspoon lemon juice
2 cups sliced fresh peaches
1/2 cup sugar
1/2 teaspoon cinnamon
Preheat oven to 375 degrees. In a large bowl, combine 3/4 cup flour, rolled oats and brown sugar. Pour melted butter over all and stir until crumbly.

In an 8-by-8-inch baking dish, combine and gently stir the rest of the ingredients.
Spread flour mixture evenly over the top and bake uncovered for 35 to 40 minutes.

Serve with vanilla ice cream, if you’re so inclined.
