Meg Makes: There's more than one way to glaze an Easter ham

We celebrate Easter, so I always find myself thinking about ham this time of year.

Last year, I ran a delicious recipe for a brown sugar-mustard glaze that basically turns to candy on ham. I'm trying to eat less pure sugar this year, though, so I experimented with a different version that calls for honey and maple syrup. It doesn't caramelize quite like the original version (which you can make by substituting 1 cup brown sugar for those sweeteners). However, the upside to having a more liquid glaze is that you can cook the drippings with some frozen vegetables (broccoli, in our house) and have a delicious side dish either with your ham or a day or so afterward.

I've also included a ham-glaze recipe from Champaign resident and cook Laura Clower, who uses orange marmalade and bourbon in her version.

Maple Ham Glaze

1/2 cup maple syrup

1/4 cup honey

1/4 cup prepared dijon or grainy mustard

1/4 teaspoon ground cloves

2 teaspoons cider vinegar

1 fully cooked spiral-sliced ham

Preheat oven to 350 and bake ham about 1 hours. Combine glaze ingredients and spread over ham.

Bake for another 35 minutes, then let the ham stand for 15 minutes before carving.

Laura Clower's Orange-Bourbon Ham Glaze

1 cup orange marmalade

1/4 cup brown sugar

2 teaspoons dry mustard (or 1-2 tablespoons prepared dijon mustard)

2 ounces good bourbon

1/2 teaspoon ground cloves

1/2 teaspoon ground ginger, optional

1 fully cooked spiral-sliced ham

1-2 tablespoons maple syrup (optional)

Double wrap ham in foil and bake slowly in 275-degree oven until hot, which will take a few hours. Mix together all ingredients except ham.

Take foil off ham, turn oven to 350 and coat ham with about half of glaze. Put back in oven for 10 to 15 minutes, pull out and add rest of glaze; put back in oven for five to 50 minutes.
