Today's Special: Smoked food truck hits the streets

A Mahomet man has opened his own food truck in Champaign.

Adam Shallenberger opened the Smoked food truck on July 6.

The truck, which features barbecue dishes and tacos, can frequently be found either near the corner of Neil Street and University Avenue in front of Busey Bank or near the corner of Prospect and Kirby avenues by the old Mattress Boss.

"I sell barbecue sandwiches and tacos using smoked meats and funky toppings," Shallenberger said. "I've been in the food industry for 14 years, and I always wanted to be out on my own for a financial opportunity," Shallenberger said.

"You don't need as huge an investment to open a food truck as you would for a restaurant. There isn't as much overhead as for a brick-and-mortar restaurant."

Among the items on the menu are smoked brisket sandwiches, smoked brisket tacos, smoked pork sandwiches, smoked pork tacos, smoked chicken sandwiches, smoked chicken tacos, grilled vegetable sandwiches, black bean tacos and loaded nachos.

"The barbecue is my uncle's recipe," he said. "His name is Steve Shallenberger."
