Today's Special: Time to start pouring at Urbana's 25 O'Clock Brewery

URBANA — Beer is flowing at a new microbrewery in downtown Urbana.

Owners Tom Sheehan and Jim Creason, both of Urbana, said the 25 O'Clock Brewery Company at 208 W. Griggs St. has kegs of their products at Pizza M and Black Dog.

"And we are shopping it around to other bars," Creason said.

While retail sales haven't been launched, Creason said he and Sheehan will soon be selling growlers (64-ounce glass containers of fresh draft beer) out of the building.

Sheehan and Creason have spent months transforming a former warehouse.

What makes 25 O'Clock beer unique, Creason said, is its yeast character.

"We have a microbiologist who is helping us grow strains of yeast," Creason said. "He gives me a small portion of pure yeast, and I step it up a couple times to the size that I need to ferment a batch of beer.

"The yeast contributes a lot to the flavor of a beer than most people know. What most people think of as beer are lagers with not a lot of yeast character. We want to tailor our yeast to our style of beer."

The next phase for 25 O'Clock will be the opening of their own taproom inside the facility, hopefully by March.
