Today's Special | CoreLife Eatery bringing healthy dishes to Champaign

CHAMPAIGN — A restaurant featuring a variety of greens, grains and broth-based dishes is opening this coming week.

CoreLife Eatery officially opens at 2512 N. Prospect Ave. (in front of the Champaign Walmart) on March 23, but the restaurant will hold a special preview "donation day" from 11:30 a.m. to 7:30 p.m. March 22 to raise money for the Daily Bread Soup Kitchen.

"Guests can pay whatever they would like for their meal, and all funds will be donated to the soup kitchen," said CoreLife spokesman Stephen Donnelly.

The cooks at CoreLife Eatery brings together scratch cooking with flavorful source ingredients and a quick, casual service line for what Donnelly called "a healthy and affordable eating alternative."

The eatery creates custom-created dishes that are free of trans fats, artificial colors, sweeteners and other artificial additives.

"The chicken and steak used are sustainably raised and never given antibiotics or hormones, and the bone broth is slow simmered all day for maximum taste and nutrition," he said.

This is the second CoreLife in Illinois following one in Peoria. Additional locations are planned later this year in Normal, Springfield and Downers Grove.

"CoreLife Eatery's first location in Peoria has performed fantastically during its first several months of operation," said Donnelly. "Champaign is a wonderful community that we're excited to be a part of, and we are confident that our new neighbors will embrace CoreLife Eatery's mission."

The restaurant is open daily from 11 a.m. to 9 p.m. It will have 45 employees.

"There's a widespread belief that healthy food can't possibly taste good. We're debunking that myth," said Todd Mansfield, partner and Wellness Champion for CoreLife Eatery. "We can't wait for the Champaign community to experience all that makes CoreLife Eatery wonderful and unique."
