CHAMPAIGN — Sun Singer Wine & Spirits is planning an expansion this fall that will add restaurant seating, enlarge the menu and creating a dining room for private parties.

The restaurant and store, located at 1115 W. Windsor Road in Champaign’s Windsor Galleria shopping center, will expand eastward to take 2,100 square feet of vacant space between Sun Singer and Green Jade restaurant.

For years, owner Mark Yarbrough operated Sun Singer with the philosophy that he would “rather have a full, small restaurant than an empty, big one.” But last year, he said, it became evident Sun Singer needed more space.

KAP Architecture has designed a plan for the eastern space that will add 42 seats, plus a private dining room that will accommodate 32. Behind the private dining room will be a kitchen much larger than the current quarters Sun Singer uses to prepare food.

The new facilities will allow Sun Singer to expand its dinner menu beyond soups, salads and sandwiches to include entrees such as steaks, pork chops, salmon, chicken dijon and scallops, Yarbrough said.

The lunch menu will also be expanded to include burgers, fish sandwiches and french fries, he added.

“The menu will be a combination of the existing menu and new items,” Yarbrough said. “Customers say, ‘Don’t lose anything,’ but we’re going to add an entree level (in the evenings).”

He said it’s possible the evening sandwich menu might be “slightly reduced.”
