I have been on vacation this week, but I'm guessing I am not alone in searching for dishes cool enough to eat for dinner in this heat. I came across this recipe and it looks perfect, especially if you can plan ahead to boil the eggs early in the morning before it gets too hot. This recipe is from Gooseberry Patch's "Homestyle in a Hurry ."
Avocado Egg Salad
6 eggs, hard-boiled and chopped
2 avocados, cubed
1/2 cup red onion,minced
3 tablespoons chopped sweet pickles
1 tablespoon mustard
1/3 cup mayonnaise
salt and pepper to taste
Mash eggs in a bowl with fork until crumbly. Add remaining ingredients except salt and pepper. Gently mix until blended. Add salt and pepper to taste. Makes six servings.
