Let's be honest, I've never met a cobbler I didn't like.
So when my mom gave me some frozen garden peaches she needed to use up, I figured there was one near in my future. While I was using frozen fruit, I decided to pull out some frozen strawberries I put away earlier this season.
I found the perfect recipe (original here ) that allowed for frozen fruit and substituted almond milk for the dairy kind. It was so good - not too sweet (although I reduced the sugar included) and bursting with bright flavors. Yum.

Strawberry Peach Cobbler
4 tablespoons butter
3/4 cup all-purpose flour
1/2 cup sugar, plus two tablespoons
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup almond milk (you can use dairy milk instead
1 cup frozen peaches
1 cup frozen strawberries
1 teaspoon sugar
Preheat oven to 350 degrees.
Put butter in an 8-inch square baking dish and set in oven to melt. When butter has melted, remove pan from oven.
Combineflour, sugar (the amount mentioned earliest in the recipe) baking powder and salt in small bowl. Add milk and mix.
Pour into baking dish and add fruit on top. Sprinkle fruit with 1 teaspoon sugar.
Bake 50 to 60 minutes or until golden and bubbly.
