Kim Strickland, one of my best friends, now lives in Alabama but is a Paxton native. When I put out a call for both pumpkin-y and Thanksgiving recipes, she sent me this one. She said it's amazing.

Pumpkin Bars
2 cups pumpkin
1 cup oil
4 eggs
2 cups sugar
2 cups flour
1 teaspoon baking soda
3 teaspoons cinnamon
pinch of salt
1 cup pecans
Mix first four ingredients well, and add remaining ingredients.
Spread on a cookie sheet and bake 20 to 30 minutes at 350 degrees. Let cool, then top with cream cheese icing.

8 oz cream cheese (Kim uses the kind with 1/3 less fat)
1 tablespoon milk
1/2 cup margarine
1 teaspoon vanilla
1 pound powdered sugar
Mix well and spread on pumpkin bars.
