[3]My mother-in-law, Mary Dickinson of Loda, has been making this appetizer for about as long as I've been coming around for holidays. It's a Craisin Cinnamon Goat Cheese Log and it is delicious.
The goat cheese is creamy and tangy and the craisins are just sweet enough. She serves it with crispy, thin rice crackers. It is so tasty and addictive. Furthermore, goat cheese doesn't have any lactose, so I can eat it even if I don't have a Lactaid pill handy.
Mary said she got the recipe from her friend Cheryl Evans, who got it from her daughter. See, it's already proven to be sharable.

Craisin Cinnamon Goat Cheese Log
1 log goat cheese, softened to room temperature (she said she buys 8 or 12 ounces, depending on how many she plans to serve)
1 cup craisins
1-2 teaspoons cinnamon
Soften goat cheese. On a sheet of wax paper, roll goat cheese in craisins until the surface is covered. Then, roll in cinnamon. You probably should use your judgement as to whether 1 teaspoon or 2 is enough.
Wrap in wax paper and chill. Serve with crackers.

Soften and shape into log. At least that's what most recipes say. They have a language of their own.
Thanks for catching that note - I wrote it to myself and forgot to take it out! After following up with my mother-in-law, it turns out she buys it already in the log shape. The rolling on the wax paper is more about getting the craisins to stick than actual shaping of the goat cheese.
It's the little things isn't it?
