The goat cheese is creamy and tangy and the craisins are just sweet enough. She serves it with crispy, thin rice crackers. It is so tasty and addictive. Furthermore, goat cheese doesn't have any lactose, so I can eat it even if I don't have a Lactaid pill handy.

Craisin Cinnamon Goat Cheese Log
1 log goat cheese, softened to room temperature (she said she buys 8 or 12 ounces, depending on how many she plans to serve)
1 cup craisins
1-2 teaspoons cinnamon
Soften goat cheese. On a sheet of wax paper, roll goat cheese in craisins until the surface is covered. Then, roll in cinnamon. You probably should use your judgement as to whether 1 teaspoon or 2 is enough.
Wrap in wax paper and chill. Serve with crackers.
