I respect people who do not share that mindset, though, which is why, today, I have two ideas for semi-homemade pumpkin desserts.
My cousin, Sarah Lewey, who lives in Missouri, swears by mixing a can of pumpkin with a cake mix and baking to make a delicious dessert.
Another recommendation came from Amy George, The News-Gazette's director of market development and special projects, swears by Krusteaz Pumpkin Pie Bar Supreme Mix. She and her husband, Ray, love to cook, but she's not into baking.
"We go all out on holiday meals," Amy wrote me. "For Thanksgiving, we brine and stuff our turkey, and generally spend a week planning, shopping and preparing appetizers, soups, casseroles and more.
"But we rarely give a thought to dessert. I have never been a fan of pumpkin pie, nor most of the other sweets that showed up after the main
meal. When guests ask what they can bring, I ALWAYS say 'dessert.' "
Last year, though, our mutual co-worker, Beth Funk, recommended the Krusteaz mix.
"I added my own personal touch by topping it with (store-bought) cream cheese icing," Amy wrote. "My children all professed it to be one of the best things they have ever eaten. I couldn't agree more. It's easy and delicious, and best of all, it gets me off the hook for dessert, which is my least favorite part of the meal to make."
Amy gave me a mix to try and she's right - they're delicious and easy. I took them to a potluck and later wished I'd hoarded them, because they're so good. Probably for the best that I didn't get that chance.
