Here we are, the last day of October 2012. Where has the time gone? It's no wonder time goes so fast; it's been so windy. It just blows it right out from under us.
This past Monday evening I saw a ring around the moon. Had it been the sun, it would have had a sundog on each side. So were these "moon" dogs I saw? Early Tuesday morning the ring was still there. I figured it meant a change in the weather and if anything, cold and unpleasant.
But we still haven't had wind like they had on the East Coast. My mind just cannot process 80 mph winds. Millions of people without power. I just cannot imagine, and I really don't want to find out.
We have wind and I do complain about cold wind, but instead I should (and I do!) thank God for our many, many blessings. The 19th Annual Haiti Benefit sale in Arthur is now history. Because of other commitments, we were unable to go on Saturday. But because of the kindness of our good friends, Ken and Mona Hunter, we could go on Friday evening.
Ken came out and got us and brought us home again. We are truly grateful.
We sure would have hated to miss out on that catfish supper. That was really good! And of course, apple crisp and soft-serve ice cream for dessert. I have such a weakness for ice cream, especially soft serve.
We stayed for part of the program. The singing was really nice, but knowing I had a full day on Saturday, we opted to go home early.
I had, of course, my cleaning jobs, which take all morning. When I started cleaning at the one place, a young man who works there commented to me, "So, you're going to clean up our messes?"
I told him I would and I will do better than I did last week, when I only sort of waved my cleaning rag around.
His response? "Oh, I didn't notice!" I threw my hands in the air and walked away. I had to chuckle, though. I thought. "Isn't that just like a man?!"
Anyway, I did have to hurry as sis Barb Gingerich was there to pick me up. I had to go do two tours in the afternoon.
It was a good day, although very tiring. I was glad to have it behind me. Somehow, doing tours leaves me exhausted. I enjoy it; the people are so friendly. I think it's mainly because it seems to me I'm just repeating myself. Which I am, but I have to keep reminding myself, I'm talking to a different group each time.
This past Sunday evening we went to Leroy and Emma Gingerichs' for supper. The couples that married in 1970 gathered to celebrate anniversaries.
There were 16 couples, but not all of them could attend.
The Gingerichs' married children served the meal. It was so good! The gravy was especially creamy and smooth. I could have eaten it like pudding!
It was such an enjoyable evening of fellowship and singing. When we first started this, it was every five years. Then it was decided to go every two years. Sunday evening, we all agreed we enjoyed it so much we'll do it next year. So now, I guess we'll just do it every year.
Now that my quilt deadlines are met, I can start on some of my outside fall projects. I just hope I still have some pleasant weather. I really need to get the garden cleared. But I believe first I will clean up the storage shed. I just might have a Dumpster load (well, half or fourth of one) of recyclables out there. I also need to clean the buggy and put the heater in for the winter. I am such a wimp when it gets cold; I need that heater.
In closing, winter is the season in which people try to keep the house as warm as it was in the summer, when they complained about the heat.
These muffins are good enough to serve anytime. Make extra and freeze for a quick breakfast or snack.
Apple Spice Muffins
2 cups flour
1 cup granola without raisins
2/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
2/3 cup unsweetened apple juice
cup vegetable oil
1 cups grated peeled apples
In a large bowl, combine the first seven ingredients. In another bowl, whisk the eggs, apple juice and oil. Stir into dry ingredients just until moistened. Fold in apples.
Fill greased or paper-lined muffin cups full. Bake at 400 degrees for 18-20 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
Yield: 1 dozen.
