I have the most generous readers and Facebook friends ever - I asked the other day for their recommendations for using Thanksgiving leftovers, they did not disappoint. I will mostly link to their recommendations, when possible.
Julie Ramlo Hohulin, whom I interned for in college in Peoria, suggested Turkey Curry. 
Local charcutier Laurence Mate suggested crispy, crunchy turkey Parmesan: "Dip small turkey leftovers in beaten egg, then a mixture of bread crumbs and Parmesan," he wrote. "Fry til crispy. Serve with pineapple and rice."
Champaign resident Marjorie Williams suggested Kentucky Hot Brown. 
Champaign resident Laura Clower and my high school friend Anna Adkins recommended Shepherd's Pie, and Laura sent me a link to this recipe . She uses candied sweet potatoes in it, rather than glazed carrots. Anna said she'll use leftover turkey, cubed butternut squash, dried cranberries, turkey gravy and either mashed white potatoes or sweet potatoes on top.
My childhood friend Jamie Kingston said she like sto make turkey sliders: "sliced turkey, cranberry sauce and/or gravy and stuffing on dinner roll." That's a classic.
