Here's a recipe for soft, delicious Cherry Pie Bars.
As a food lover, I've never been to a potluck I didn't enjoy.
Today, a few coworkers are having one to celebrate the departure of Amy George, The News-Gazette's director of Market Development and Special Projects.
Amy was my boss for about a year, and I'm particularly sorry to see her go (although it's wonderful to see how excited she is to be relocating). But I have been daydreaming about this potluck all week.
Another coworker, Jorja Johnson, was kind enough to share her recipe for Cherry Pie Bars, which originally came from the Taste of Home website.
Cherry Pie Bars
1 cup soft margarine
2 cups sugar
1 teaspoon vanilla
3 cups flour
1 tablespoon almond extract
1 can cherry pie filling
Preheat oven to 350 degrees. Mix all ingredients, except flour and cherry pie filling, using a mixer. Add flour and mix again. The batter will be thick. Grease a jelly roll pan and spread 2/3 batter into it.
Spoon cherry pie filling on top. Drop remaining batter in top, spreading carefully to cover.
Bake for 35 minutes. When cool, drizzle with glaze (recipe below).
Powdered Sugar Glaze
1 1/2 cups powdered sugar
1 to 2 tablespoons milk
1 teaspoon almond flavoring
